Paavo’s Bite draws its inspiration from the opera The Last Temptations.
The blessings of land and water sustained Paavo Ruotsalainen on his lifelong journey. The robust flavor of rye bread, the delicate smokiness of vendace, and the fresh brightness of spruce shoot cream intertwine like old hymns echoing through a quiet night.

The smoked vendace are prepared by Järvi-Suomen Kalatuote, the traditional rye bread comes from Päivärinne’s rye crisps, and the spruce shoot powder is produced by Rahula Ranch.
The dish is available at the Saimaan Maku café from July 1st to August 3rd.
